Ingredients

1 kilogram of Large eggplants

½ cup of Tahini (sesame paste)

3 Garlic cloves

15 milliliters of Lemon juice

Olive oil

1 pinch of Salt

Parsley

Preparation

Step 1 : Pierce the whole eggplant with a fork, place it on a baking sheet, and bake until very soft.

Step 2 : Once cooked, remove from the oven, peel off the skin, and mash the pulp until smooth. Set aside.

Step 3 : Crush the garlic and mix it with salt, lemon juice, and tahini.

Step 4 : Add this mixture to the mashed eggplants and mix well.

Step 5 : Adjust the salt to taste and serve in dishes.

Step 6 : Garnish with chopped parsley and a drizzle of olive oil. Serve with pita bread around.
