Ingredients

1 can of Chickpeas

1 teaspoon of Baking soda

2 Garlic cloves

2 Lemons

¾ teaspoon of Salt

¼ cup of Liquid tahini

¼ cup of Ice water

Olive oil

Paprika

Chopped parsley

Preparation

Step 1 : The process starts by placing the can of chickpeas in a large pot with enough water to cover them.

Step 2 : Bring to a boil and add a small amount of baking soda, which helps to remove the skins and soften the chickpeas.

Step 3 : After the water boils, continue cooking the chickpeas for about ten minutes, making sure they are well cooked and tender.

Step 4 : Once ready, rinse with cold water to stop the cooking and let them drain well.

Step 5 : In a processor or blender, combine the garlic, lemon juice, and salt, and process for about a minute until you get a smooth mixture.

Step 6 : Then, add the tahini and process for another minute.

Step 7 : Gradually add ice while blending to achieve a silky texture.

Step 8 : Next, add the cooked chickpeas and continue processing for four to five minutes.

Step 9 : If the mixture is too thick, you can add more ice to adjust the consistency.

Step 10 : Taste and, if necessary, adjust by adding more lemon juice, tahini, salt, or ice water according to your preference.

Step 11 : When the texture and flavor are to your liking, transfer the mixture to a serving dish.

Step 12 : Create a small hollow in the center and pour a drizzle of olive oil.

Step 13 : To decorate and add more flavor, sprinkle paprika and chopped fresh parsley.
