Potato Knishes
Ingredients
2 kilograms of Potatoes
1 kilogram of Flour
3 Eggs
5 Onions
Warm water
Vinegar
1 pinch of Pepper
1 pinch of Salt
Preparation
Step 1 : To prepare the knishes, first boil the potatoes until perfectly cooked, then mash them into a firm puree and set aside.
Step 2 : In a pot with oil and butter, brown all the finely chopped onions without seasoning.
Step 3 : Once ready, add the onions to the mashed potatoes, season with salt and pepper, and refrigerate the mixture.
Step 4 : In a mixing bowl, sift the flour and set aside, while in another bowl, mix the neutral oil, vinegar, eggs, warm water, and salt.
Step 5 : Gradually add the flour to the wet mixture, stirring with a spoon until a dough forms.
Step 6 : Divide the dough into 4 parts and let rest for 20 minutes.
Step 7 : Then, roll out each piece from the center outward with a rolling pin until very thin.
Step 8 : Place the cold filling 3 cm from the edge of the dough, in parallel to the longer side.
Step 9 : Roll the dough over the filling, giving 2 turns, and cut off the excess dough with a knife.
Step 10 : Next, cut and seal the knishes by pressing with your hand.
Step 11 : To give them the traditional shape, push the top inward to create a hole in the dough.
Step 12 : Brush each knish with egg yolk mixed with oil and bake on a greased baking sheet for 15 to 20 minutes over medium-high heat.
