Ingredients

4 Pita breads

1 Large eggplant

4 Hard-boiled eggs sliced

4 tablespoons of Hummus

4 tablespoons of Tahini

4 tablespoons of Amba

4 teaspoons of Harissa

Vegetable oil

Preparation

Step 1 : Wash the eggplant and cut it into slices.

Step 2 : In a deep skillet with hot oil, fry the eggplant slices until golden on both sides.

Step 3 : Remove from the oil and let drain to eliminate excess fat.

Step 4 : Warm the pita bread and cut it in half.

Step 5 : Spread the inside with hummus and tahini.

Step 6 : Fill with the fried eggplant slices and hard-boiled eggs.

Step 7 : Add amba on top and serve.
