Pineapple and Hoja Santa Juice
Ingredients
3 liters of Water
3 Hoja Santa or Acuyo leaves
1 Pineapple piece
Preparation
Step 1 : The pineapple should be thoroughly rinsed with the peel included.
Step 2 : Next, remove the crown from the pineapple on a cutting board.
Step 3 : The pineapple crown can be planted by burying the pulp part in a flowerpot with soil so that in about three years, it produces a new pineapple.
Step 4 : Proceed to remove all the peel and set aside.
Step 5 : Cut the pulp into slices and remove the fibrous center with a tequila glass, reserving the remaining pulp for another preparation.
Step 6 : In this recipe, only the peels and fibrous center will be used.
Step 7 : Place the peels and fibrous center of the pineapple in a deep pot and cover with three liters of water.
Step 8 : Bring to a gentle boil for 20 to 30 minutes, then remove from heat and let cool.
Step 9 : Strain and reserve the extracted juice.
Step 10 : Wash the hoja santa leaves, remove the thick stem, and blend with the strained pineapple water.
Step 11 : It is recommended not to add sugar.
Step 12 : Pour the result into a jug, refrigerate, and let ferment for 2 or 3 days to enhance its flavor.
