Ingredients

4 Chicken pieces

2 Diced carrots

2 cups of Rice

3 cups of Water

1 teaspoon of Oil

Rosemary

½ teaspoon of Cumin

1 tablespoon of Oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a very hot pot, brown the chicken with the skin side down over low heat and seasoned.

Step 2 : Meanwhile, place the rice on the stove and boil for one minute with a teaspoon of oil and a little salt.

Step 3 : After this time, remove from heat, add cold water, and strain.

Step 4 : Next, add raw carrot pieces to the chicken and cook everything for 10 minutes.

Step 5 : Season the rice with ½ teaspoon of cumin, one tablespoon of oil, salt, and pepper to taste; mix well and pour over the carrots.

Step 6 : Then, cover the pot and cook for 20 minutes.

Step 7 : If desired, add almonds, light raisins, or chopped parsley.
