Israeli Shakshuka
Ingredients
6 Eggs
2 teaspoons of Tomato paste
¼ cup of Vegetable oil
6 Chopped garlic cloves
2 teaspoons of Salt
1 teaspoon of Sweet paprika
1 kilogram of Fresh, unpeeled tomatoes, quartered
¼ cup of Chopped fresh flat-leaf parsley
1 cup of Tofu
Preparation
Step 1 : In a small pot, add the tomatoes, garlic, paprika, tomato paste, and vegetable oil.
Step 2 : Bring to a boil over low heat for 30 minutes without a lid, stirring occasionally.
Step 3 : Transfer the tomato sauce to a pre-greased skillet.
Step 4 : Cook over low heat and add the eggs, breaking the yolks with a fork.
Step 5 : Sprinkle feta, tofu, and parsley on top.
Step 6 : Cover and continue cooking until the eggs are ready, about 3 to 4 minutes.
