Ingredients

1 Boneless lamb leg

1 Stale bread slice

½ teaspoon of Thyme

½ teaspoon of Chopped rosemary

½ teaspoon of Ground chili

½ teaspoon of Ras el hanout

½ teaspoon of Ground cumin

1 teaspoon of Turmeric

Olive oil

4 Natural yogurts

1 teaspoon of Parsley

½ teaspoon of Cilantro

1 Lemon

1 teaspoon of Mint

1 Red onion

Arugula

Mushrooms

Olive oil

Apple cider vinegar

Parsley

1 Red chili

4 Cherry tomatoes

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the marinade paste, it is recommended to combine all spices with the oil in a mortar or blender, adjusting the spices to taste.

Step 2 : Then, set aside this mixture.

Step 3 : Season the lamb meat with salt and pepper, then coat it well with the spice paste.

Step 4 : Next, cover and leave in the refrigerator for about twelve hours to allow the flavors to develop.

Step 5 : Before cooking, it’s advisable to take the meat out of the fridge about thirty minutes ahead to reach room temperature.

Step 6 : Then, cook in a very hot skillet until it reaches the desired doneness.

Step 7 : Meanwhile, prepare a salad by finely chopping the onion and mixing it with the greens, parsley, mint, and lemon zest.

Step 8 : To this, add an emulsion made with oil, lemon juice, and salt, mixing all ingredients well.

Step 9 : For the lassi, blend the yogurt with sugar until smooth.

Step 10 : In the blender, combine the herbs, lemon juice and zest, salt, pepper, and a splash of oil, blending everything with the yogurt.

Step 11 : Strain the mixture and keep in the refrigerator until ready to serve.

Step 12 : To prepare the stale bread, lightly moisten it and heat in a skillet without browning, then cut into triangles.

Step 13 : Finally, assemble the dish by placing the lassi in a glass and serving the meat, salad, and bread triangles on a plate.

Step 14 : Garnish with cherry tomatoes and red chili if you wish to add a spicy touch.
