Ingredients

1 Chopped chicken

3 Onions

3 tablespoons of Sumac

6 Cardamom pods

Cinnamon stick

5 Garlic cloves

10 grams of Black pepper

2 tablespoons of Lemon juice

4 tablespoons of Reserved chicken broth

1 tablespoon of Mixed spices

1 tablespoon of Sumac

White bread

4 Naan bread

Reserved chicken broth

Toasted pine nuts

Toasted almonds

Parsley

Sumac

Olive oil

1 pinch of Salt

Preparation

Step 1 : To start, in a hot pot with olive oil, sauté the onions and sprinkle a little salt on them.

Step 2 : The salt will help soften the onions without caramelizing them.

Step 3 : It is recommended to keep them on low heat, cover the pot, and stir occasionally.

Step 4 : Next, place the chicken pieces in the pot with the skin side down and brown them in hot olive oil.

Step 5 : Once browned, add the onion, spices, and enough water to cover the chicken.

Step 6 : Let it boil, remove the fat, and cover the pot until the chicken is cooked.

Step 7 : Then remove the chicken and reserve the broth.

Step 8 : To prepare the baked chicken, place the chicken on a baking tray and mix lemon juice, chicken broth, and ground spices.

Step 9 : Pour this mixture over the chicken and bake until crispy.

Step 10 : Meanwhile, once the onions have softened, add the sumac.

Step 11 : To assemble the final dish, dampen each piece of bread with enough broth, add olive oil, the onion mixture, and sprinkle with more sumac.

Step 12 : Place the breads on a baking tray and bake at 200°C until toasted.

Step 13 : Finally, cover the bread with the baked chicken and top with pine nuts, almonds, and parsley.

Step 14 : When serving, accompany with a portion of yogurt.
