In a pan with hot oil, sauté the ground meat with grated carrot and chopped onion, adding salt, oregano, and sugar.
Add hard-boiled egg and raisins, while soaking the matzah in hot water.
To assemble the lasagna, layer the meat, matzah, ricotta, and mozzarella cheese.
Repeat with more matzah, meat, and cheese, finishing with white sauce.

Pesach Lasagna
Ingredients
400 grams of Ground meat
1 Carrot
1 Onion
Raisins
1 Hard-boiled egg
3 Matzah (unleavened bread)
300 grams of Low-fat ricotta
Mozzarella cheese
Queso de máquina and grated cheese
Preparation
Step 1 : In a pan with hot oil, sauté the ground meat, then add grated carrot and chopped onion previously sautéed.
Step 2 : Season with salt, oregano, and a tablespoon of sugar, then add the hard-boiled egg and raisins.
Step 3 : Soak a piece of matzah in hot water for 30 seconds.
Step 4 : To assemble the lasagna, place the ground meat at the base, followed by the soaked matzah and then the ricotta.
Step 5 : Top the ricotta with mozzarella cheese.
Step 6 : Repeat the process, adding another soaked matzah and more ground meat; optionally, the ground meat can be placed directly on the cheese.
Step 7 : Place another soaked matzah on top and pour white sauce.
