Varenikes are a traditional stuffed pasta in Ukrainian and Jewish cuisine. In this version, they are prepared with a delicious filling of mashed potatoes and onions, wrapped in a homemade dough that is simple to make.

Potato and Onion Varenikes
Ingredients
40 Flour
2 Eggs
1 tablespoon of Vegetable oil
Water
500 grams of Potatoes
200 grams of Chopped onion
2 tablespoons of Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a bowl, mix the flour, eggs, oil, and enough water to obtain a smooth, homogeneous dough.
Step 2 : Once formed, it is recommended to let it rest for 30 minutes to improve elasticity.
Step 3 : Meanwhile, heat oil in a skillet and sauté the chopped onion until golden, being careful not to burn it.
Step 4 : When ready, combine the mashed potatoes with the cooked onion, seasoning with salt and pepper to taste.
Step 5 : Let the mixture rest.
Step 6 : Then, roll out the dough with a rolling pin until it reaches an appropriate thickness and cut circles about 8 cm in diameter using a cutter.
Step 7 : Place a portion of the filling in the center of each circle, fold in half to form a half-moon, and seal the edges with a fork to ensure they are secure.
Step 8 : Bring a large pot of salted water to a boil and add the varenikes.
Step 9 : Cook for approximately 5 minutes, or until they float to the surface, indicating they are ready.
Step 10 : Finally, remove with a slotted spoon and serve hot.
Step 11 : For a more intense flavor, they can be served with fried golden onions.
