Ingredients

1 Chicken quarters

2 Sliced onions

2 Crushed garlic cloves

60 milliliters of Olive oil

1 ½ teaspoon of Allspice

1 teaspoon of Ground cinnamon

1 tablespoon of Sumac

1 Lemon

200 milliliters of Chicken broth

2 tablespoons of Za'atar

20 grams of Butter

50 grams of Pine nuts

20 grams of Chopped parsley

1 tablespoon of Tahini

2 Natural Greek yogurt

1 Garlic

½ Lemon juice

1 tablespoon of Olive oil

6 tablespoons of Warm water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Place the chicken in a large bowl along with the onions, garlic, oil, spices, lemon juice, salt, and pepper.

Step 2 : Mix all the ingredients well and leave in the refrigerator for several hours or overnight to allow the flavors to meld.

Step 3 : When ready to cook, preheat the oven to 220°C (430°F).

Step 4 : Arrange the chicken on a tray with the skin facing up, pouring the marinade and broth over it.

Step 5 : Sprinkle with za'atar and sumac, then bake for about 45 to 50 minutes until the skin is golden and crispy.

Step 6 : Meanwhile, melt the butter in a small skillet and add the pine nuts with a pinch of salt.

Step 7 : Cook until golden, then place on absorbent paper to drain excess fat.
