Shakshuka
Ingredients
4 Eggs
1 Red pepper
1 Onion
200 grams of Tomato purée
1 tablespoon of Harissa
1 teaspoon of Cumin
1 teaspoon of Paprika
1 pinch of Green peperoncino
1 tablespoon of Olive oil
1 Bunch of parsley
100 milliliters of Water
Preparation
Step 1 : The onion should be peeled and finely chopped.
Step 2 : Then, wash the pepper, cut it in half to remove seeds and membranes, and slice it into thin strips.
Step 3 : In a non-stick skillet, heat a drizzle of oil and sauté the onion on low heat until transparent.
Step 4 : Next, add the pepper slices and cook for a few more minutes, gently stirring to combine flavors.
Step 5 : Incorporate the tomato purée along with the water, harissa, cumin, paprika, and a pinch of peperoncino, mixing carefully to blend the spices.
Step 6 : Let the sauce simmer on low heat for about 20 minutes, stirring occasionally and adjusting salt if necessary.
Step 7 : Meanwhile, wash and finely chop the parsley or cilantro, setting it aside for later.
Step 8 : Then, make small wells in the sauce and, with great care, crack an egg into each without breaking the yolk.
Step 9 : Cover the skillet and cook for approximately 3 to 4 minutes, until the whites are set and the yolks remain creamy.
Step 10 : Finally, sprinkle the chopped parsley over the dish, turn off the heat, and serve hot, accompanied by fresh bread or pita.
