Cheese Blintzes
Ingredients
4 Eggs
1 cup of Flour
⅓ cup of Sugar
¾ cup of Milk
¼ cup of Water
1 teaspoon of Vanilla
Non-stick spray
Oil for frying
1 cup of Ricotta
8 ounces of Cream cheese
¼ cup of Sugar
1 Egg yolk
2 teaspoons of Lemon juice
1 teaspoon of Vanilla
1 pinch of Salt
Preparation
Step 1 : The night before, place the ricotta in a strainer lined with cheesecloth and let it sit in a bowl in the refrigerator.
Step 2 : This step helps remove excess liquid, making the filling firmer and creamier.
Step 3 : To prepare the batter, combine all ingredients in a food processor, blender, hand mixer, or simply with a fork.
Step 4 : Mix until smooth and homogeneous, without lumps.
Step 5 : Then, heat a non-stick skillet over medium heat and grease it with non-stick spray.
Step 6 : To check if the skillet is at the right temperature, sprinkle a drop of water; if it sizzles, it's ready.
Step 7 : Pour approximately one-third cup of batter and spread in circular motions to form a thin, uniform layer.
Step 8 : Cook the crepe for about 60 to 75 seconds, or until the edges turn golden and the surface dries, without flipping.
