Ingredients

1 cup of All-purpose flour

1 ½ teaspoon of Baking powder

½ teaspoon of Baking soda

½ teaspoon of Salt

½ teaspoon of Cinnamon

½ teaspoon of Ground ginger

¼ teaspoon of Ground nutmeg

2 teaspoons of Grated fresh orange zest

1 teaspoon of Grated lemon zest

1 cup of Date honey

½ cup of Cold strong coffee

¼ cup of Vegetable oil

2 Large eggs

Preparation

Step 1 : Preheat the oven to 325 degrees Fahrenheit.

Step 2 : Lightly grease a 9 x 5-inch bread pan and line it with parchment paper, then re-grease it.

Step 3 : Set the prepared pan aside.

Step 4 : In a bowl, mix the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, orange zest, and lemon zest, reserving the mixture.

Step 5 : In another container, whisk together the date honey, coffee, and vegetable oil, then set aside once combined.

Step 6 : In an electric mixer bowl at medium speed, beat the eggs and sugar together for 2-3 minutes until smooth.

Step 7 : Add the date honey mixture and blend everything evenly.

Step 8 : Then, add the flour mixture and mix well.

Step 9 : Pour the batter into the prepared pan and bake for 60 to 70 minutes, or until a cake tester inserted in the center comes out clean.

Step 10 : Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
