Ingredients

500 grams of Flour

15 grams of Fresh yeast

300 milliliters of Water

6 grams of Salt

30 grams of Sugar

1 Egg

2 tablespoons of Dried garlic flakes

2 ½ teaspoons of Dried onion flakes

1 ½ teaspoon of Black sesame seeds

1 teaspoon of Poppy seeds

1 ½ teaspoon of White sesame seeds

½ teaspoon of Flake salt

Water

2 teaspoons of Baking soda

Preparation

Step 1 : In a small bowl, dissolve the yeast in warm water and set aside to activate.

Step 2 : In a large bowl, mix the flour, salt, and sugar, ensuring they are well combined.

Step 3 : Add the water with yeast to this mixture, hydrating the entire dough and forming a homogeneous texture.

Step 4 : Transfer the dough to a floured surface and knead for approximately 7 to 8 minutes until it becomes elastic and smooth.

Step 5 : Place the dough in an oiled bowl, cover with a damp cloth, and let it rest for 1 to 2 hours until it doubles in size.

Step 6 : Meanwhile, in a processor or mortar, grind the garlic and onion flakes, then mix with the sesame seeds, poppy seeds, and flake salt; set this mixture aside for later use.

Step 7 : Once the dough has risen, divide it into 8 equal parts and shape into balls, sealing the edges well.

Step 8 : Cover these balls with a cloth and let rest for 15 minutes.

Step 9 : Then, using floured fingers, punch a hole in the center of each ball and gently stretch to form the characteristic bagel shape.

Step 10 : In a large pot, bring water to a boil with baking soda, adding a teaspoon of baking soda, and let it simmer gently.

Step 11 : Boil the bagels in batches in this water for about 1 and a half minutes on each side until they develop a firm surface.

Step 12 : After boiling, place them on a baking tray with the smooth side up.

Step 13 : Before baking, brush the bagels with beaten egg and sprinkle with the reserved seed and spice mixture to add aroma and crunch.

Step 14 : Bake in a preheated oven at 200°C for about 20 minutes, or until golden and appetizing.

Step 15 : Finally, cool on a wire rack before enjoying, allowing them to reach the perfect point and be ready to savor.
