Step 6 : Then, gently fold the coconut and cornstarch mixture with the maple syrup and pumpkin purée.

Step 7 : Incorporate the egg whites carefully until the mixture is uniform.

Step 8 : Using a spoon, form the cookies and place them on the baking sheet, about one inch apart.
