Harira Soup
Ingredients
2 Chopped tomatoes
1 Chopped onion
1 cup of Chopped parsley
7 teaspoons of Olive oil
1 ½ liter of Water
½ teaspoon of Ground walnuts
½ teaspoon of Ground cinnamon
½ teaspoon of Black pepper
1 pinch of Salt
16 ounces of Chickpeas
1 ½ cup of Lentils
1 cup of Water
1 Egg
3 tablespoons of Flour
Preparation
Step 1 : Start by heating a large skillet and adding three tablespoons of olive oil.
Step 2 : In that oil, sauté the tomatoes, onion, and parsley until the onion becomes translucent, creating a delicious aroma in the kitchen.
Step 3 : Once ready, transfer this mixture to a large pot, add more water, and bring to a boil.
Step 4 : During cooking, add the spices and legumes, keeping the pot covered over medium heat for about 30 minutes so all flavors meld and the legumes cook perfectly.
Step 5 : Meanwhile, prepare a white sauce in a bowl, mixing the flour, one egg, and a cup of cold water, stirring gently until you get a batter-free mixture.
Step 6 : When the soup has cooked long enough, slowly pour the white sauce into the pot, stirring constantly to prevent lumps and help the soup thicken, achieving a silky texture.
Step 7 : Finally, if desired, you can blend the soup with an immersion blender for an even smoother and creamier consistency, just before serving, so each spoonful becomes a comforting and flavorful experience.
