Ingredients

200 grams of Red lentils

3 Carrots

1 Onion

3 Garlic cloves

1 Potato

3 tablespoons of Tomato paste

1 liter of Vegetable broth

4 tablespoons of Olive oil

2 teaspoons of Chili flakes

1 teaspoon of Ground cumin

1 pinch of Salt

1 teaspoon of Chopped parsley

½ Lemon

Preparation

Step 1 : Start by preparing the chili oil by combining two tablespoons of olive oil with the chili flakes.

Step 2 : Gently heat the mixture, taking care not to burn the oil to preserve its flavor.

Step 3 : Meanwhile, rinse the red lentils with cold water until the water runs clear, ensuring impurities are removed and their texture is enhanced.

Step 4 : In the meantime, clean and chop the carrots into small pieces, then peel and dice the potato into similar-sized cubes.

Step 5 : Finely chop the onion and garlic to facilitate their incorporation into the cooking process.

Step 6 : In a pot, heat two tablespoons of olive oil and add the carrots, onion, potato, and garlic.

Step 7 : Cook over low heat for about four minutes, stirring occasionally to prevent sticking or burning.

Step 8 : Next, add the vegetable broth, tomato paste, rinsed lentils, and cumin.

Step 9 : Let everything cook together on low heat for about twenty-five minutes, stirring occasionally to blend the flavors and soften the vegetables.

Step 10 : Once the vegetables and lentils are tender, blend the mixture using an immersion blender or transfer to a regular blender for a smooth, creamy consistency.

Step 11 : Taste the soup and adjust the salt or seasonings to your liking, adding more if you wish to intensify the flavor.

Step 12 : Before serving, squeeze a few drops of lemon to add a fresh, aromatic touch.

Step 13 : Finally, garnish with chopped parsley and drizzle with some of the prepared chili oil for an extra burst of flavor and aroma.
