Ingredients

1 cup of Pre-soaked red beans

1 cup of Cooked green beans

7 Garlic cloves, crushed

1 Zucchini cut into cubes

1 cup of Chopped spinach or cabbage

1 Diced tomato

1 Chopped onion into cubes

1 cup of Chopped onion

Cup of chopped celery stalks

½ cup of Chopped parsley

½ teaspoon of Basil

1 cup of Tomato juice

4 tablespoons of Olive oil

Vegetable broth

Preparation

Step 1 : Place the beans in a pot with six cups of water and the vegetable broth, cover, and cook for one hour or until softened over medium heat.

Step 2 : Then, reserve the cooking liquid.

Step 3 : In a skillet with olive oil, sauté the vegetables.

Step 4 : Next, purée half of the beans.

Step 5 : Add all ingredients into a pot, along with two cups of the bean cooking liquid and half a cup of water.

Step 6 : Bring the mixture to a boil and reduce the heat.

Step 7 : Cook on low heat for one hour.

Step 8 : If necessary, add water to thin the soup.

Step 9 : Then, season with salt and pepper to taste.

Step 10 : Serve the soup hot, ready to enjoy.
